Pankratz returned to UCM in the winter of 2013 as a full-time assistant coach after spending the 2012 season as an assistant coach at Spring Hill College, in Mobile, Ala., where she worked under former Jennies Hall of Fame head coach Peggy Martin. Before the 2015 season, Pankratz was named the Associate Head Coach.   Prior to her post at Spring Hill, Pankratz was the Jennies graduate assistant coach during the 2010 and 2011 seasons. Since returning to the Jennies, Pankratz has helped coach the Jennies setters to All-MIAA selections all three years, including All-MIAA First Team and All-American Julia Bates in 2013. In total, the Jennies have had 10 All-Americans since Pankratz joined the coaching staff. In 2009, Pankratz finished a five-year career for the Jennies ranked No. 2 all-time in assists with 5,502, the seventh highest career mark in MIAA history. She was named an AVCA All-American and first-team All-MIAA that year after guiding the Jens to the NCAA South Central Regional as the No. 1 seed and host of the tournament.   During her career at UCM, Pankratz led her teams to a 149-39 overall record playing for legendary Head Coach Peggy Martin from 2005-08 and her successor, current head coach, Flip Piontek in 2009. She was the starting setter for four years and a team captain for two, helping the team win 81 percent of its matches. The volleyball programs 2009 conference championship was the first since since 2000, but the Jennies earned a bid to every NCAA postseason tournament during her career. Pankratz recorded double-figure assists in more than 35 games in each of her four seasons and collected 47 career double-doubles. She also dished out at least 30 assists in 129 matches.   In the classroom, Pankratz was just as impressive. She made the Deans list every semester at UCM and was an MIAA Presidential Honor Roll member numerous times with a 4.0 GPA. She made the MIAA Commissioners Academic Honor Roll and the CoSIDA Academic All-District team three times. She was a two-time Academic All-MIAA honoree. She also received the prestigious NCAA Post-Graduate Scholarship, was named Outstanding Graduate for Accounting and was a finalist for the UCM Charno Award in 2009-10.   Pankratz was an active member of SAAC, as the past-president. Pankratz also managed to compete in a second sport during her senior season, as a member of the Jennies softball team. The Buhler, Kansas native graduated with a degree in accounting from the University of Central Missouri, holding a 3.88 GPA. She earned her masters degree from UCM in exercise science in the spring of 2012.
